I am not a cook. Nor do I play one on T.V. (or on this blog). You can read about my macaroni and cheese disaster if you don’t believe me. While I don’t pretend to be a cook, I am not always a disaster in the kitchen.
Sometimes I love what I make and the veggie burger roll is something that turned out well. Of course, I didn’t actually make any of the ingredients, I just assembled them together, but that isn’t the point. It was a quick, healthy meal that made me excited about eating.
I was trying to come up with something to eat and looked around the kitchen. I had an avocado that needed to be used. I love avocados but they sure are finicky. You don’t have a big window to use them. Whatever I made had to use the avocado.
A Roma tomato. It probably needed to be used soon, too. OK, so now I have an avocado and a Roma tomato. Those two things are pretty darn good alone, but I needed a bit more than that. What could I put with it?
Searching the cabinets and the refrigerator, I didn’t see anything I wanted to make with my two already selected ingredients. Then, I opened the freezer and staring back at me was the perfect solution, black bean chipolte veggie burgers.
Now, I needed a delivery system (aka fork, bun). I didn’t really want to eat it with a fork and I didn’t want all the bread of the bun. Plus, there was the little problem of not actually having any buns. So, I went on another search.
Again, the solution was found in the freezer.
There, in the freezer were whole grain tortillas. They are one of the few things I can freeze (maybe one day I’ll tell you more about how I am freezer challenged).
I took two veggie burger patties and put them in the skillet with a tiny amount of olive oil. Once it was soft enough, I chopped it up with my spatula. While it was cooking, I cut up the tomato and avocado.
When the veggie burger was close to being done, I put the tortillas in the microwave and heated them. I took the warm tortillas and put the sliced avocado and tomato on them then added the cut up veggie burger.
I took a photo of the yummy goodness then rolled them up and ate them. Easy, fast, healthy, and good. My four favorite words when it comes to cooking.

3 eggs scrambled with cottage cheese. Sometimes I add quinoa, and if there’s peppers and/or onions they go in, too.
